Homemade Toasted Oat and Coconut Muesli + $10 OFF VITACOST

This is my husband’s new favorite breakfast. You could call it muesli or overnight oats. It’s very simple to make and to prepare; just assemble the night before and enjoy the next morning at home, on the go or at work. 

Muesli is basically a combination of raw oats and other ingredients like grains, seeds, fruit, nuts and mixed with milk, yogurt and fruit juice (orange or apple). It is a very common breakfast dish in Sweden as it known to as its place of origin.

This recipe calls for toasted oats, toasted coconut, crystallized ginger, almonds, chia seeds and spices. By toasting the oats, they become more fragrant and nutty in a good way.

The first step is simply to toast the oats and coconut in the oven.

Overnight oats by sugar free mom.

Muesli is usually eaten cold but my husband takes his to work and heats it up in the microwave and loves it. I pack it in these containers the night before in the fridge. Like th eimage above, a lot of people also use half pint or pint ball/mason jars with these these storage caps.

Toasted Oat and Coconut Muesli Recipe

Ingredients:
2 cups old-fashioned oats
1/2 cup unsweetened coconut flakes
1/4 cup chopped almonds
1/4 cup chopped dark chocolate covered almonds
1/2 cup chopped candied ginger
1/4 cup chia seeds
1/2 teaspoon ground cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon salt

To Serve:
frozen or fresh fruit
cold milk of your choice (I used vanilla almond coconut)
yogurt (optional)
pure maple syrup or honey

Directions:
Preheat oven to 350 degrees F.
Place oats and coconut in two different baking sheets.
Toast oats and coconut in oven for 5-7 minutes. Coconut toasts quite quickly, keep an eye on them after 4 minutes.
Remove from the oven and allow to cool.
In a large bowl toss together oats, coconut, ginger, almonds, chia seeds, spices and salt.
To store, place in airtight jars or a well sealed plastic bag.

To prepare muesli:

Do so the night before or at least 2 hours before serving. Put desired amount of muesli into a bowl or jar (or mug like I did). Top with frozen fruit (blueberries, strawberries, etc…) the night before, or add fresh fruit the next morning. Pour milk and yogurt combination over muesli and fruit. Drizzle with maple syrup or honey. Cover and place in the fridge overnight.

It may be served cold or warm.

Notes: A great addition to the muesli would be dried fruit such as dried cherries, cranberries, blueberries, or raisins. Recipe may be doubled or tripled or whatever. You can also use sweetened coconut but keep in mind it toasts super fast.
