Blueberry Avocado Chia Breakfast Pudding

I was super excited to try this recipe and I was even more excited when I tasted it. It is truly delicious and thanks to the healthy fats in the avocado, it keeps your hunger tucked in for a while.

It’s really easy to make and you canย even make it the night before and have it ready the next morning! Perfect for an on-the-go breakfast.

Simply blend the avocado, blueberries, milk, banana, yogurt, sweetener and vanilla extract in a food processor or blender.

Move to a container and add the chia seeds and incorporate.

Let sit in the refrigerator for at least 30 minutes or overnight, add preferred toppings (I used shredded coconut, almonds and sliced banana) and enjoy this delicacy of a breakfast.

Ingredientsย blueberry avocado pudding4
1/2 avocado
1 cup blueberries (fresh or frozen)
1/4 cup plus 2 tbsps vanilla almond milk (or any milk of your choice)
1/2 large banana
1/4 cup plain greek yogurt or coconut yogurt to make it vegan
1 tbspย agave nectar syrupย (or pure maple syrup or honey)
1/4 tspย vanilla extract
1 tbspย chia seeds

Topping ideas: toasted shredded coconut, banana slices, hemp seeds, chopped almonds.

Directions
Combine all ingredients except the chia seeds in a food processor (I use this one) or blenderย (I use this one) and blend until smooth.
Add the chia seeds and incorporate.
Pour pudding into containers and refrigerate for at least 30 minutes or overnight.
Add toppings of your choice and enjoy!

Notes: there might be some brown bits from the avocado after letting it sit overnight but it’s totally edible, just mix the pudding with a spoon to make them disappear.
