Lemon Chia Chewy Balls (Dairy-Free, Gluten-Free, Vegan)

These are so frickin’ good, I can’t even. They’re so good I didn’t want to eat them so that I didn’t run out too fast. The combination of the roasted cashews, the lemon zest and the coconut is like a match made in heaven. The snack balls are perfect for a post-workout protein boost, or even for packing in your carry-on for air travel!

On top of their magnificent flavor, they are super easy and quick to make. Simply combine all the ingredients together in a food processor, roll on more coconut, and ta da!

Lemon Chia Chewy Snack Balls Recipe (Dairy-Free, Gluten-Free, Vegan)

Ingredients lemon chia balls1
1/2 cup roasted salted cashews
1/4 cup sunflower seeds
1/2 cup gluten free old-fashioned rolled oats
1/2 cup (unsweetened) coconut flakes, plus more for garnish
3 dates, pitted
2 tablespoons hot water
2 tablespoons chia seeds
Zest of 1 lemon
Pinch of sea salt

Directions
Combine the cashews, sunflower seeds, oats, coconut flakes, and salt in a food processor (I use this one). Pulse until a fine meal forms. Add the pitted dates, water, chia seeds, and lemon zest. Pulse again until the mixture becomes a dough like consistency.

Remove the dough and place it in a small bowl. Roll into small round balls.

Then, on a piece of parchment paper or on a plate, roll into more coconut flakes as a topping. Once rolled in coconut, roll them again with your hands so the coconut sticks to the dough. Eat right away or place in refrigerator to set. These can also be kept in the freezer.

Notes: You could replace the sunflower seeds for the same amount of cashews. You can also roll them in more chia seeds as a second topping.

  3. how on earth did I miss these. Sorry, I have been away the last two weeks on a course and didn’t see a pingback, but i found this on the Inlinkz page they loo absolutely ace. Now i have a question for you as I am a chia seed fan, I was always told you have to soak them for a min of 4 hours otherwise when they are in your body they will draw moisture from inside you and dehydrate you? How do you get around this with these balls, do you soak them first? xx They look delish I might make for my last week on the course and thank you sooo much for bringing to tea time x

    1. Chia seeds to absorb a lot of water. I did not soak them at all in this recipe and ate a bunch and nothing happened to me so you don’t have to be so strict, as long as you keep hydrated during the day which one should be doing anyway.
      But I would give the suggestion, and I think I’ll do this next time, of soaking them for 15 minutes before using them. They might change the texture of the balls but they’ll probably be fine. 4 hours is not necessary.

      1. ah I would be interested to see how they change when soaking them. At least it didn’t suck the life out of you and leave you in a crumply heap hehe. These do look good i have one more week at the Pain Clinic and might take these as a treat next week 🙂 thank you x
