Ingredients: watermelon fresca5
2 cups of chilled watermelon
5 large basil leaves
3 ice cubes of frozen light coconut milk, or about 1/4 cup chilled (I used Trader Joe’s canned light coconut milk)*
4 mint leaves (optional)
sweetener of choice to taste (optional)
2 tsps lemon juice (optional)
pinch of salt to bring out the sweetness of the fruit (optional)
A splash of cold water

Directions:
Blend all of the ingredients together until smooth (I use my trusty nutribullet), serve in a chilled glass and enjoy!

Notes: you may leave out the coconut milk altogether and have a simple and delicious basil watermelon agua fresca, it will also look prettier! You may also sub the coconut milk cubes for water cubes for a chilled and frothy effect.
