I am not vegan, but I tried this recipe simply because it sounded good to me, and it was. It was delicious.
These are really easy to make but they’re not the best option if you are in a hurry as they take 15-20 minutes to bake.
Just mix all the ingredients together, form pancakes on a baking sheet and bake!
Baked Blueberry Oatmeal Pancakes (Vegan and Gluten-Free) Recipe
Ingredients
1/3 cup gluten free rolled oats
1/3 cup + 1 Tbsp light coconut milk
1/2 tsp gluten free baking powder
1/2 banana, mashed (reserve the other half)
1/4 cup frozen or fresh blueberries
1/2 tsp brown sugar (optional)
Instructions
Preheat your oven to 180C or 400F
Mash half of your banana in a bowl, save the remaining half as topping for later.
Add in the oats, baking powder, milk and sugar and stir until they incorporate and form a thick batter.
Add in the blueberries and lightly incorporate.
Line a baking sheet with parchment paper, and grease it with some coconut oil.
Place the batter onto the sheet in the shape of pancakes, don’t spread it out too much.
Bake for 15-20 minutes or until golden brown.
Remove from oven and serve immediately. Top your pancakes with the remainder of your banana and whatever else you’d like!
