Let me take you through a little photographic journey. I used the #2015bestnine website to get my most liked photos of 2015 on instagram. The combination turned out pretty nice, lots of nature/landscapes and a little bit of delicious food. Here we go:
1. PDX and Mount Hood
It seems that on a trip to get some happy hour fish and chips I got lucky when I took this photo of the Portland International Airport and snowy Mount Hood on the same frame.
2. Mirror Lake
My first snow hike ever led me to amazing views of Mirror Lake. I really enjoyed this 3 mile roundtrip hike. Although the hike is labeled as easy, it has a constant steady elevation and it was quite challenging because we chose to do it during winter in sub freezing temperatures, in a snowed in trail and of course on the way back it had gotten dark. It was one of my favorite outdoor activities I have ever done. The snow and the cold really get out the best of me, it just really fills me with life.
3. Dick’s Kitchen
These good looking burgers and sweet potato fries come from one of my favourite places to dine in Portland: Dick’s Kitchen. The place is well thought out, nicely decorated, good noise control and the food is great. The meat is grass fed and wild caught (salmon), the burgers are juicy and tasty, the fries are baked (not fried), hence their name “not fries” in the menu and the desserts are great too offering gluten free and paleo options. They also serve room temperature water (no ice!) which I can’t tell you how much I appreciate this. A place for everyone.
4. A Path in Meherabad, India
This was one of my favourite pictures I took this year. The sunset is magical and the feeling you get in that path can’t be compared to anywhere else in the world, such peace. This path can be found in Meherabad, India.
5. Sunset and the Columbia River
The best thing about this photo is that I took it by the river only 5 minutes away from where I live! There are lots of wonderful hidden paths that lead to different spots to river beaches like this one by the amazing Columbia River. The sad part is that I don’t take advantage of them as much as I should.
6. Small River
I actually took this picture the same day I took the picture above. This place is amazing.
7. Colorful Micro Houses
I just love these cute and colorful micro houses in downtown Portland. The red car I think really added to the photo.
8. Smørbrød
This tasty food is called Smørbrød, it’s basically an open-faced sandwich that consists of toasted delicious buttery rye bread with delicious seasonal toppings. Mine was cottage cheese and prairie creek farm beets and was eaten at the cutest Nordic-French Bakery called Maurice in downtown Portland. The lemon souffle pudding and the radishes with butter there were so good too.
9. Homemade Flourless Chocolate Cupcakes
Finally, people really liked this photo of my homemade flourless chocolate cupcakes with salted chocolate ganache (pictured before the ganache). I didn’t think the photo was that great but I don’t blame people, these were SO good! I need to make them again.
In a way, your favorite instagram pics are a pretty good summary of my current life and past year: Oregon exploring, Portland dining, homemade cooking, and a great trip to India.
