For the second year in a row I got a nutribullet for my birthday from my dad. Last year, I was living in Durham, NC when I received it for the first time and fell in love with it. That summer, we moved to India and I took the nutribullet with me only to find that a plug converter wasn’t enough. I needed a voltage transformer/stabilizer too, which during my stay in rural India, I was never able to find the right one.
Last September, we came back to the US to renew our Indian visas planning to go back to India. 7 months later we are still here and my old nutribullet (plus other belongings) are still in India.
My birthday came up once again (on April 21), and my dad sent me a new nutribullet for my birthday.
I love this thing, I use it mostly for amazing smoothies, but I’ve also made hummus, tahini, pesto, and pasta sauce with it.
I love roasted beets and I roasted a bunch last week, their natural sweetness is perfect for smoothies. Today, I share with you my strawberry beet smoothie recipe which is packed with all kinds of healthy goodies and it’s tasty!
Beets are a food that you are not eating but you should be eating.
Health Benefits of Beets:
1. Rich Source of Vitamin C and other Valuable Nutrients
Beets are high in immune-boosting vitamin C, fiber, and essential minerals like potassium (essential for healthy nerve and muscle function) and manganese (which is good for your bones, liver, kidneys, and pancreas). Beets also contain the B vitamin folate, which helps reduce the risk of birth defects.
2. Rich Source of Betaine
Another nutrient that red beets are a rich source of is betaine; betaine is vital to good cardiovascular health. Betaine’s purpose is to lessen your body’s concentration of homocysteine, a substance which is hurtful to your blood vessels in the sense that it can contribute to peripheral vascular disease, stroke and heart disease.
3. Beetroot Juice Benefits – Lower High Blood Pressure
The effects on high blood pressure are apparently so potent that information published in the journal Hypertension, a publication from the American Heart Association, established that consuming 500 milliliters of beetroot juice resulted in a measurable reduction in hypertension in just an hour. These beneficial results lasted even up to 24 hours after such beetroot juice drinking. Scientifically, the credit goes to the high content of nitrate that is present in the beetroot juice. (1)
Strawberry Beet Smoothie Recipe
Ingredients:
1 cup of greens (kale, spinach, beet greens)
1/2 cup of roasted beets*, chopped.
1/2 frozen banana
5-6 frozen strawberries
1 inch piece of fresh ginger
small handful of almonds
2 tbsps of vanilla or honey greek yogurt
1 tbsp of ground flax seeds
1/2 cup of milk of your choice (coconut, almond, regular, etc)
water as needed
Directions:
Blend all the ingredients together until smooth!
*How to Roast Beets
1 Preheat oven to 375 degrees F.
2 Coat beets lightly with oil.
3 Wrap beets in aluminum foil, place on a baking sheet, and roast in the oven until cooked through, approximately 45 to 60 minutes.
4 Remove from the oven, let cool for 10 minutes, and then peel with paper towels.
