Roasted Lime Chili Chickpeas

Looking for an easy recipe for a filling, tasty and nutritious snack? Well, here it is! These roasted lime chili chickpeas are crispy golden goodness. And they’re super simple to make. Basically 

Basically, you just need to mix the ingredients and throw the chickpeas in the oven, and about 20 minutes later, you’ve got an amazing side or snack.

These chickpeas won’t make you feel guilty no matter how many you eat.

These chickpeas won’t retain their crispiness, so it’s best to serve right away, or simply eat straight from the baking sheet. Or if you don’t mind them losing their crispiness, they’ll be good to toss in salads the next day.

Roasted Lime Chili Chickpeas Recipe

  • Servings: 4 as a snack or side

2  15 oz. cans of chickpeas/garbanzo beans, drained & rinsed
2 tbsp extra virgin olive oil
1 tsp smoked paprika
2 tsp chili powder
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp sea salt
juice of 1 lime
lime zest (optional)

Preheat the oven to 450 degrees F.
In a large bowl combine the chickpeas, olive oil, lime juice, and spices. Mix until well coated.
Place the chickpeas in a single layer on a lightly oiled baking sheet for 15-20 minutes. Check after 10 minutes if they’re lightly browned and crisp, shake or toss once. Remove from the oven when ready, sprinkle with lime zest and enjoy!

Leftovers don’t stay crisp. You can try to recrisp them in the oven for a few minutes.
