This cheery smoothie will knock your health socks off. 

Blueberry Beet Smoothie Recipe

  • Servings: 1 large smoothie

Ingredients: blueberry beet smoothie
1 cup spring greens, loosely packed
1/4 cup roasted beets*
1/2 cup blueberries
1/4 cup vanilla greek yogurt
1/8 cup oats
1 tbsp sunflower seeds
1/2 cup orange juice or a whole orange
3/4 cup cold water

Directions:
Blend all of the ingredients until smooth and enjoy!

Notes: soaking the oats in the water while you prepare the rest of the ingredients would be good but not necessary, especially if you don’t have a powerful blender. I use my trusty nutribullet.

You can substitute the yogurt for coconut yogurt, banana, ice cubes, non-dairy milk or a combination.

*How to Roast Beets

1 Preheat oven to 375 degrees F.
2 Coat beets lightly with oil.
3 Wrap beets in aluminum foil, place on a baking sheet, and roast in the oven until cooked through, approximately 45 to 60 minutes.
4 Remove from the oven, let cool for 10 minutes, and then peel with paper towels.

  1. I just love the nutribullet. Think I have to have one when I move to Eygpt too. I am not a beet person but have seen a lot of recipes with them in. Does it taste “beety” in the smoothie? C
