Between the carrot, the ginger and the strawberries, this smoothie is packed with so many health benefits I don’t even know where to begin. Just go make it.
Carrot Strawberry Ginger Smoothie Recipe
Makes 1 large smoothie
Ingredients:
half large carrot, chopped or shredded
5 frozen strawberries
1 tsp grated ginger
1 cup coconut milk
1/2 cup water
1 tsp Flax Seed Meal
1/2 – 1 tsp Maca Powder (optional)
8 cashews (optional)
small handful spinach (because why not? you won’t even taste it)
Directions:
Blend everything together until smooth and serve with a straw.
Notes: the cashews add protein to the smoothie and the maca root has been traditionally used in Peru as a stress-fighting adaptogen, and to increase stamina, boost libido and combat fatigue.

Does the carrot mix in all right or do I need to chop it up a bit?

Oh, good question. I should’ve specified.
Definitely chopping it helps. I have a pretty powerful “blender”, I use the nutribullet with the 900w motor. (I used to have the nutribullet 600w and worked as good.) But I still chop the carrot. Shredding might be good too.

Hi, could you describe the taste? Usually when I add carrots into my smoothies they always tend to give the strongest taste and smell so I was wondering if this happened with this smoothie with either the carrot or the ginger? Or was it the perfect smoothie where each ingredient had its time to shine! Love to hear back from you. 🙂

I couldn’t taste too strongly either of them. I think the strawberries and coconut milk really help for that 🙂 Even if it doesn’t become your favorite smoothie, if you try it, you’ll probably finish it 😉
