I make lunch for my husband to take to work and he tells me that his coworkers always want to see what he brings next and they are totally jealous.
I don’t promote making people jealous, but the point is that these lunches are great. They are homemade, healthy and super delicious.
One time, my husband told me that they catered pizza at work for lunch and he preferred to eat the lunch I packed him instead! I couldn’t believe it. Who can resist pizza? Especially if it’s free.

I like making a meal-plan for the week and prepping on Sunday, preparing all the ingredients and then just creating the puzzle every night. All these lunches are make-ahead meals. I pack his lunch in his lunch backpack and refrigerate the whole thing overnight. He just grabs it from the fridge every morning and heats his coffee before heading out.
I usually make enough to send him the same lunch twice a week and even one lunch for me.
I always include a hand written note.

Lunch #1
Main: Tuna salad sandwich with red onion, celery and parsley.
Side: Cucumber and carrot salad with honey lemon vinaigrette.
Dessert: Chocolate caramels and a lychee jelly cup.
Lunch #2
Main: Turkey sandwich with tomato, lettuce, onion, roasted red pepper, and mayo.
Side: Garden salad with balsamic vinaigrette.

Lunch #3
Main: Trader Joe’s Pad Thai with homemade sautéed veggies in garlic and soy sauce (carrots and lima beans).
Dessert: Chocolate caramels and a lychee jelly cup
Lunch #4
Main: Salmon salad sandwich with celery, lemon and cayenne. (based on this recipe)
Side: Greek salad (chickpeas, tomato, red onion, parsley, cucumber, lemon, olive oil, salt) (based on this recipe)
Dessert: Reese’s cup
Lunch #5
Main: Broccoli, Chickpea and Brown Rice “Bowl” with dijon soy sauce dressing. I added roasted onions and cashews to the recipe.
These are my favorite food containers for packing lunch. They are super leakproof and sturdy, the only time I’ve had some leakage is with liquidy olive oil based vinaigrettes which most containers don’t contain so I add an extra layer of plastic wrap below the lid.

These are great ideas! I pack lunch for my husband every day, too (btw, his colleagues are totally jealous as well), and I am always on a look out for good and simple ideas.
