5 More Lunches To Make Your Co-Workers Jealous

A little bit of time ago I shared with you 5 lunches I made for my husband to take to work, below are 5 more to inspire you to make-ahead healthy, nourishing and tasty lunches to go (or eat them at home.)

It’s not a lie when I tell you that I am famous from his lunches amongst his co-workers. 

Lunch #1

Lentil Salad with Herbed Goat Cheese + Balsamic Vinaigrette + Trail Mix Clif Bar

Salad: spinach, cooked brown lentils, cherry tomatoes, red onion, parsley, goat cheese, dressing.

Lunch #2

Nicoise Salad + Honey Dijon Dressing

Salad: romaine lettuce, tuna, green beans, roasted red peppers, olives, tomatoes, potatoes, red onion, hard-boiled egg, dressing.

Lunch #3

Quinoa Salad + Cilantro-Lime Vinaigrette

Salad: quinoa, spinach, roasted red peppers, cherry tomatoes, parsley, avocado, dressing.

Lunch #4

Turkey Sandwich + Pea Hummus + Roasted Chili-Lime Chickpeas + Wheat Crackers

Lunch #5

Quinoa & Kale Patties + Cucumber & Carrot Raita + Trail Mix Clif Bar

For the raita simply mix plain greek yogurt, shredded carrots, chopped cucumber, cumin, salt and pepper.

    I don’t have any make ahead lunch recipes as my lunches are mainly rice based, but I always cook/prep various items in the weekend and portion them up/ freeze for use during the week.
